Zucchini Pizza Casserole

My sister gave me this recipe...which is delish!! I think it originated from my sister-in-law. You must try this! My sister didn't tell me what it was until after I took my first bite and told her I thought it was good. =) haahaa! So here we go....
You need to shred 4 cups of zucchini and/or squash...I did both. =) 
Note: Place zucchini in a strainer, sprinkle with salt and let it drain for about 10 minutes.
After you're finished draining the zucchini, you mix together 1 cup of shredded 
cheese (cheddar and mozzarella blend), 1/2 cup of parmesan cheese, and 2 eggs.
Press your mixture into a greased 9X13 pan and bake for 20 minutes at 400 degrees. 
While "crust" is baking you'll want to brown your beef...
You want a 1/2 of an onion to saute with your browning beef.
I used my nifty pampered chef chopper....LOVE IT...to finely chop 
up the 1/2 onion =) It totally helps with keeping the tears down. =)
Throw the chopped onion in with your beef...I used a pound of beef...
Brown it...this is still a little pink..you want to make sure you don't see any pink.
After your beef is done drain all the juice out of the pan. Another cool thing from 
pampered chef, my strainer...it doesn't let any meat out while you drain all those juices. 
You don't want to put the drained juices down your drain, it's not good for your pipes. 
I always save a can to drain it into.
Bring your pan back to your burner. You can turn your burner off now, the warmth 
of the burner will be enough for this step. You just add a 14 oz. can of pizza sauce. 
Mix well and leave it on the burner long enough for the sauce to get warm.
Spread your meat over your baked "crust".
Cover the top with your shredded cheese (cheddar and mozzarella blend) and sprinkle 
with parmesan cheese and stick it back in the oven for another 20 minutes at 400 degrees.
And you're all finished! =)
 I made one for me and one for my friends who had twin girls
in October...Their baby girls are still in the hospital in NICU, if you 
think of it say a prayer for the both of them (and their mommy & daddy), 
especially them, to get stronger and healthier so they get to come home soon.

Zucchini Pizza Casserole
4 cups unpeeled shredded zucchini and/or squash
1/2 teaspoon salt
1 cup grated mozzarella
2 eggs
1/2 cup grated parmesan
1 cup shredded cheddar and mozzarella blended cheese
1 pound ground beef
1/2 chopped onion
14 oz. pizza sauce

Shred zucchini/squash. Place in strainer, sprinkle with salt. Let drain for 10 minutes. Combine eggs, zucchini/squash, parmesan cheese, and shredded cheddar and mozzarella cheese. Press into a greased 9X13 pan. Bake at 400 degrees for 20 minutes.

While crust is baking brown beef and onion. Drain and add pizza sauce. Pour beef mixture over top of baked zucchini "crust". Top with shredded cheese and sprinkle with parmesan cheese. Bake for an additional 20 minutes.
