Ricotta Cookie Flag


I'm back from vacation in California! =) I'll show you pictures next post =) It was great! We crammed a lot in a 10 day trip...So, it's now 4th of July. I'm glad we're getting a day to chill with the family.

I was given this amazing ricotta cookie recipe a little while ago and I've made these a couple of times and it has now become my favorite recipe! My niece, Tashia, and I decided to make a flag out of ricotta cookies for the family gathering. =)

to put the sprinkles back in the container I remembered that I had a funnel I could use...worked pretty good.

Ricotta Cookies Recipe
Ingredients:
15 ounce ricotta cheese
3 eggs
2 teaspoons vanilla
2 cups sugar
1/2 pound butter, soft (1 cup = 2 sticks)
4 cups flour
1 teaspoon baking soda
1 teaspoon salt

Directions:
Mix first three ingredients together in mixing bowl. Gradually add sugar, then butter, mixing on medium speed till creamed. Combine flour, baking soda, and salt in a separate bowl and gradually add to the creamed mixture.

Drop by rounded tablespoon-fulls onto non-stick cookie sheets. Bake at 375 degrees for 10 minutes on top shelf. Cool before icing.

Icing Recipe
Ingredients:
1 pound confectioner sugar (4 cups)
1/2 pound butter, soft (1 cup= 2 sticks)
1 tablespoon vanilla
Milk as needed

Directions:
Combine butter and 1/2 pound (2 cups) confectioner sugar and cream. Gradually add remaining sugar and beat in mixer until creamy and fluffy. Add vanilla, then add a little milk slowly for desired consistency.

Frost cooled cookies and top with sprinkles. =) enjoy!!!
