Why all the fuss about high fructose corn syrup? I suggest you check out these links: www.lef.org www.thekitchn.com www.naturalnews.com I couldn't explain it any better then they do. Now, I'm not saying that in any way that this homemade chocolate syrup is good for you...everything in moderation. =) I am saying it's better for you then the store bought brand. I challenge you to look at the ingredients on all the things you throw in your cart on your next shopping trip to the grocery store. You'll be shocked to know how many of your 'regular' food items include this deceptive little sweetener. I am s l o w l y trying to ween myself (and my husband) off of processed foods. It is getting ever so hard to shop 'healthy'. A couple tips: shop at a local produce market, start your own little garden of 'must haves', grow your own herbs (this will save you a bundle of money), find a local butcher. Anyways, enough of my little speech. =) On to the good stuff...

First you will need 1 1/4 cups sugar |
Then 1 cup unsweetened cocoa |
1 cup water |
1/4 teaspoon salt |
2 teaspoons vanilla |
In a medium saucepan, whisk together sugar and cocoa powder until
most of the lumps are gone. |
Add water and salt and cook over medium heat, stirring frequently. |
Bring to a boil and cook for a few minutes, until thickened, continuing to stir frequently. Remove from heat and let cool for 5 minutes, then add vanilla extract. |
Once your homemade syrup has had it's time to cool, funnel it into an airtight container of your choice. I cleaned out and reused my old Hershey's syrup bottle. Note: the syrup will be a bit runny at first, once it's in the fridge for a little bit and has time to set it will be the same consistency as the regular store bought syrup. |
